Normally, such organizations that operate on a 5-day work week will have an employee manual explicitly stating that taking leave both before and after holidays is not possible. In such cases, I have encountered organizations that will deduct the full 6 days.
There are institutions that provide 30 working days of leave in a year by combining casual, sick, and personal leave. These organizations will deduct only the actual working days, which amounts to 3 days in your case.
