Could you please help me draft a letter regarding the failure to serve the notice period? One of our employees joined us, worked for a day, and then disappeared after receiving the appointment letter. He did not provide any information and ignored our calls and emails afterward.
I intend to send a legal notice to him and notify his current employer about his violation of company policy.
I would appreciate it if you could provide me with a sample letter for this purpose.

First and foremost, what is it you actually want to achieve? The guy worked just for a day. Do you think it is worth the effort for you to spend so much time and effort to go through the process of what you are trying to do? Unless, of course, you have any evidence that he grabbed some confidential info and vanished.
Frankly, I don't think it's worth the effort. Just forget him and get on with your work.

I appreciate TS's viewpoint and also want to add one more point. Instead of trying to take action on the guy who disappeared, you should concentrate on understanding and addressing the consequences that led the new incumbent to move out in just a day's time. This way, you can prevent others from following suit. Don't waste your valuable time on non-value-added work.

In this case, he worked for only 1 day. But what if the employee has worked for, say, around 1 year and then he moved out, breaking the notice period policy? What action can we take against him? What kind of consequences will he face in his future career?

Usually, if the employee goes absconding, his employment stands automatically cancelled. Two or three reminders are sent to the last known address, and then his F&F is sent to the last known address.
I don't think there is much you need to do. Fighting a legal case against one person by the company is a total waste of resources and time.
