If you first accepted the offer from XXX company and now do not want to join, inform them in writing.
Did you report to their office and formally join work there? If that is not done, then there is not much of a legal hassle.

It is courteous to inform the first company so they can offer the position to the next candidate, rather than leaving them uninformed. How the other company will know where you are joining and how they might cause you any trouble is unclear.
But remember one thing: don't make salary the sole criterion for joining a company. Every company has its share of politics and problems. If you are a habitual job hopper, it will be evident from your resume. This could also be a reason for rejection in a new company, even if you have performed well.
