I can imagine how you are! First of all, keep motivating yourself. One thing we have to notice is, no one will guide us in the corporate sector. We have to take the initiative. You said you are the only person in your HR Department.
As our friends said, first, go through the organization structure, HR policies, functions, and know to whom you are reporting. Go through the Revision History which your previous employee had done so that you can understand. Take an empty template of any document and compare it with the existing document of the same so that you can learn how to update or how to start.
