Take up a course in competency mapping,or in psycometic testing... If you r looking at some specialized field in HR go for some TTT, etc.
Over and above keep a goal to do a job and learn as it gives more exposure for eg: Helps in implementing the theories practically...

as per my opinion you can do any one of the following courses in addition to MBA (HR):-
1. PG Diploma in Labour Laws :- It will help you to enhance your skills in IR Issues as this Labour Law is not thoroughly explained in MBA Syllabus.
2. PG Diploma in Industrial Counselling or Psychologial Counselling or Social Psychology is an extra advantage.
These courses are offered by Various universities in India by distance mode, some of the universities are:-
1. University Of madras
2. Institute of Psychotheraphy and Management Sciences
3. Kuvempu University, SHimoga, Karnataka offers PG Diploma in SOCIAL PSYCHOLOGY this course will help you lot.
4. CCIMS Institute, Bangalore
5. Annamalai University
6. Madurai Kamaraj University
7. Alagappa University
