In the state of Maharashtra, what is the law on overtime for an organisation covered under the Shops and Establishments Act? Are there any exceptions, and how should the overtime be calculated?

There is no exemption for shops and establishments. You have to pay overtime wages at double the rate for the hours which exceeds 48 hours in a week.
