I have been working for a very young Indian IT start-up (under 10 working people) for the last 20 months. When I started working here, I didn't know any better and have been receiving my salary in cash in installments. My employers have been cutting my salary based on the number of days I took leave and cafeteria charges. The company doesn't have much infrastructure yet, like accounting personnel, and all my payslips are Excel-made and hand-signed by the director.
Now I have over 2 years of experience, and I am trying to switch jobs, but I am facing a problem based on the mode of payment I have been receiving. I have not been paying taxes, and I have just been receiving a salary of 33,000 INR in my bank account as hard raw cash. I need some advice on how to proceed for a new job.

Payment of Wages
Payment of wages can be in cash, cheque, or bank transfer. There is no rule that says it should be only a bank transfer. After all, you should receive money in hand on or before the 7th day of the month-end.
Salary Certificate and Proof of Payment
Obtain a salary certificate from your employer to use as proof. If necessary, you can show a bank statement as evidence of cash or cheque deposits.
Providing a Pay Slip Template
You can also find a pay slip template in Excel format on the internet and provide it to your employer to fill out, specifying the payment mode as cash. Ask them to affix a seal and signature.
