In the 7 years, how have you kept up with changing technology and skills?
I understand and sympathize that you had to attend to your father, which you did as a dutiful son. If you have kept up with the latest technology in your field, then you could answer that though there is a gap, you kept abreast of your knowledge by doing --------. It is difficult, but you can try to convince employers of your skill level and highlight your other good qualities which will attract an employer.

As Nathrao said, in IT, skills matter first. Employers look to see if you have the necessary skills to deliver results for them. Have you not worked anywhere intermittently? No matter. If you update your skills, it will help you secure a job.
