Why do you need to do anything differently?
The process remains the same, the only thing that changes is that you conduct the interview via Skype, Zoom etc.
You should have a robust recruitment and selection process in place to screen applicants, shortlist the top five candidates, conduct the interviews, do the analysis of each candidate's suitability, conduct the reference checking and make the decision.
The pandemic has not created a need for a new process. Online interviews have long been a feature of hiring, particularly for international job applicants or those who live some distance from the place where they are applying for a job.
If you end up with a dud employee, it will not be due to Covid 19, it will solely be due to your organisation not having a robust and consistent recruitment and selection process in place. How you interview the person either online or in person matters not one jot.
