Catering businesses generally have a high rate of mortality, so please be careful. You say you are new to this. Is this new to catering, or new to having your own business or both?
Do your business plan, particularly the financial analysis and your marketing plan.
Very best of luck. :)

Dear Durgaji;
Love.
Your question is vague hence appropriate answer will not be possible. However I give you few tips, which may help you.
1) Fulfill legal formalities.
2) If you don't have budget constraints, then take services of a professional to design your mobile van and also to market your products.
3) Decide the product mix and tariff considering the taste and economic condition of the locals.
4) Remember that location, timings, cleanliness, hygiene and freshness of the food are very important factors to be taken care off.
If you write further details, better guidance can be given. Anyway I wish you all the best for your new venture.
His Blessings;

Dear Durgaji;
Love.
If yours is a partnership firm, prepare a partnership deed. If it is a private limited company register it in ROC. Get the design of your mobile van approved from RTO and register the vehicle for commercial use. Avail food and health licenses from Municipal Corporation. If you are hiring services of cook and other helpers register under shops and establishment authority. If yours is a franchise, enter in to a contract and observe their rules and designs and hygiene standard. If you have a plan to create your own brand name register the brand, logo, and design as per the advice of your attorney. If your municipality is providing hawker’s space, apply for the same according to their rules. I hope these prima-facie information will help you.
His Blessings;
