If the designs are to be derived from minimalism then your company needs to design elaborate and customised recruitment tests. Like recruitment for software engineers, there could be many rounds. But before that, based on the past clients' requirement, you need to create case studies for recruitment.
You can give the candidates case studies based on the requirements of the past customers and find out whether the candidate has a design sense.
Yes, behavioural interviewing will also be useful to test the design sense of the candidate but one needs to ask the questions that are customised.
Lastly, you may tell the candidates to come up with their past works. In fact, no need to call the candidate for the interview as well. The past works can be told to send by email. You may call the candidates, provided you are satisfied with the candidate's past work.
By the way, do you hire candidates with BFA/MFA qualification in your company? I ask this question because not all fine art/visual art colleges teach form in their graduation. At a few colleges, the form is taught at the post-graduate level. This could create a disadvantage to a few candidates.
