The first step would be to see what are the process changes that have taken place. You need to draw a DFD (data/process flow diagram) for that.
Once you draw the PFD you can explain the process step by step.

Yes, you can create manuals for each sub-process. For example: Manual for hiring, on boarding, induction, training and development and all the HR processes. Please see appended a sample.
