Hi,
First explain about the overall HR Functions of your Organization right from Recruitment to Exit Interview.
Then explain in detail about each process.
Involve the Interns in Recruitment /Attendance/ filing system/ payroll / statutory activities.
After office hours it is not necessary to engage them.
On the last day collect a report from as to what they learned in terms of HR functions.

Each day Take a topic on HR ,Explain the topic in brief, and assign related task for the day.
Continue with next topic only when you feel satisfied about earlier topic.
Hr is vast subject,try and address what is actually needed and train accordingly.
Give them thoughts that can trigger them to learn and acquire knowledge.
