Background verification - can they track my previous employment in a govt sector whose PF is autonomous (no UAN number)

I am currently working (8 months) in a government sector where the PF is autonomous (no UAN number). I am also pursuing an MTech degree (regular) alongside my job since everything has been online due to COVID. Now, I have received an off-campus placement in an MNC, and I plan to leave the government sector. I have not disclosed this government employment, and if asked, questions will arise about how I managed to pursue an MTech while working full-time. I am being treated like a fresher straight out of college.

My question is, can they track my government job during background verification (3rd party check) or after I join the MNC, or when I file income tax returns?

When you started your career in the government sector and are registered with the Govt PF, you should not have hidden the fact of employment with your prospective employer. As an MNC, they have a fine system of tracking such information. Hence, suppression of such information can be a scar to your future employment.
