Overwhelmed by 11,000 Job Applications: How Can We Efficiently Sort Emails and Attachments?

Hello Everyone, I have read through some of the posts here, and I must applaud your intelligent contributions. However, I have a question. My organization recently received about 11,000 job applications for different positions via email. Is there any software or email extractor that can help us extract each email and attachment to a specific folder for each applicant? I have been working on this task for a long time, and it will be very difficult to sort the CVs and applications manually, so I need someone's help.
