It is a good question and really difficult to answer. However, I want to share my experience.
- We gave it to a contractor who in turn supplies food at subsidized rates.
- We introduced a computerized canteen coupon system.
- Established a canteen committee which tastes every day and sends to the counter.
- We have improved quality and thereby won the confidence of employees.
- Laid glazed tiles, stainless steel tables, and a music system during lunch and dinner times.
- Established various standards in food quality.

For the past 4 years, we have not had any problems. Prior to that, daily problems were there, and there was a lot of mental agony for the HR department. We have initiated various actions as well. We have also imparted all employees with culture-building training programs, which have helped them understand us better and be more productive.

Basically, you should have a good contractor, win the confidence of employees by monitoring the system, and address grievances.
