My views on your query :-
1. You are interested to frame one Remuneration Structure based on net take home and industry standard. Remuneration structure is usually based on gross salary and CTC. Because if the earning is taxable, it is not possible for any employer to judge individual ITAX savings pattern. Industry standard depends on - Similar type industry, Local standard, All India standard etc. for bench marking.
2. You are also interested to frame incentive scheme - it may be profit related, individual performance basis, productivity link or combination of many etc. along with disbursement mode.
3.Content of Appointment Letter/Consulting Partners - It depends upon the objective of the nature of business which you have not mentioned along with your future growth plan.
It is also essential to assess actual number of employees properly ( you have mentioned 6 at present ) - any other contractual employee - may be sweeper,Office Boy, Security etc. Because coverage under ESIC as on date 10 emps and PF 20 Emps including contractual Emps.
I will suggest you to discuss with someone first to frame the basic need properly and then go ahead with the project with anyone you like.
