Lightning is when a vacancy is filled very quickly, without going through full procedures, without waiting for references, and without verification of qualifications or experience. This usually happens when the candidate is known. It also occurs when a position needs to be filled very quickly following the departure of an employee, usually at a mid to senior level. It is also known as Panic Recruitment and is always a little dangerous.
Bespoke is when the vacancy requirements are very specific, and the candidate being sought must have very precise credentials. You could say a tailor-made candidate for a tailor-made position. An example would be in IT but specializing in, say, algorithms.
