There is a book you can refer to titled "Mapping Work Processes" by Diane Galloway. In India, the publisher is Productivity Press, T. Nagar, Chennai. Your subject is actually process mapping. You can search on Google for process mapping, and you will find many references. I hope you can proceed further with this. In case you need any clarification, please ask.
