HR project topics - joining a manufacturing company

As you said that you would be joining a manufacturing firm, I suggest you do your project focusing on the manufacturing sector.
You can do a comparitive study by doing a gap analysis on any area of HR function by selecting few companies in the manufacturing sector.
I suggest you to do a study on Training need analysis in the same sector. It is very challenging to do this in any manufacturing firms as the training need would directly focus on the skill used by the employee in production.

Well if you are looking for Project in Training and development then you can go for "Training Need Analysis" keeping in mind that a what sort of training is required for manufacturing sector and how training impact of development of the employee and organisation as a whole and for that you need to get in touch with your company where you are going to join and ask them other details !
