Struggling with Canteen Cost Reduction Project: How Do I Start and What Should I Know?

Hello seniors,

I am doing MBA in HR (3rd sem). I have got a project (dissertation work) in a mobile-network service provider company. There I have to reduce the cost of lunch per plate.

I don't have any idea regarding Canteen Management or so. I am helpless; how should I proceed?

I know I have to get a thorough knowledge about the market price of each and every vegetable. This I shall try my level best at. But without any basic knowledge about the Canteen, I can't even prepare a questionnaire.

So, can you please help me on it?

They have a caterer who provides them the readymade food to their cafeteria.

I am in a great state of tension. I am also feeling helpless. Please guide me on how should I take my steps. The main problem is that it's a popular company like that of RELIANCE, so I feel ashamed to ask my external guide about these silly things.

Can you please send me any Excel sheet format where I have to do all calculations (with formulas)? This may also help me to show the path.

Someone was saying I have to calculate the caloric value of each employee's diet. How should I do it?

I'm sure that they will help me, but I have to have the basic knowledge on which I can design my project and approach accordingly.

Please, please help me.

I attach herewith a calculation sheet in Word format that will help you understand how to calculate per dish. Also, please maintain a record of expenses by category for each day and include every purchase.
