Perhaps Lord Ganesha's big nose could signify the ability to smell out opportunities from far off too.

I guess Ganeshji has a long nose to smell anything fishy going on in the organization and will be the first one to bring a solution to it with the help of his other organs!! Hope it suffices your curiosity!!

I believe the long nose symbolizes the skill of being proactive, i.e., to sense things in advance before actually reaching there, as the long nose goes before.
