I've been working with this current company for 1.5 years but only received a small increment 8 months ago. As a Project Engineer with an Honors Degree from a University, I believe I am underpaid. My colleague has just resigned, which prompted me to explore other job opportunities or request an increment. The work is fine, but I feel undervalued in terms of compensation. Additionally, I will have to take on more work due to his resignation. Comparatively, my friends from university are earning between $500 to $1000 more than my current salary.
Therefore, I would like to submit a letter requesting an increment to my manager soon.

Hi, I'm not Indian but Canadian. I realized one thing, it might be a matter of culture that is different from North American one so please don't judge me. I'll explain my opinion about this matter.
The way I've seen the letter or the way to write it is nearly as begging your boss for a better life. If you are a professional with good qualifications and you do a very good job, you should think that when you send your resume (CV) to a company, you are not "begging" for a job but you are offering your services. It is a totally different approach.
If I were you, I would meet the person in charge and have a nice conversation with him, explaining that you think you should have a better salary for the job you are doing, etc. A letter could be useful to bring him in person and tell the same thing that you are discussing with your boss. In Canada, it is acceptable to have a good face-to-face meeting with your superior, and it is also seen as a sign of maturity and professionalism.
This was just my 2 cents, from the perspective of a Canadian.

The same thing applies to a salary raise. We usually have yearly job reviews, and this is usually the best time to discuss a salary raise. In Canada, it is totally acceptable to have a peaceful face-to-face meeting with our superiors. I would never only send a letter to ask for a salary raise; instead, I would manage to schedule an appointment with my boss. Then, I might bring a letter with me that says the same thing that I told him, as a way to keep a record of our conversation. I would not beg my boss to raise my salary; I would probably explain to him that I have been working for them for a while, that I believe I am doing a very good job (if your boss agrees that you do a good job, it will be better). Then, I would explain that I like working for the company, but with all due respect, I think we should have a review of my salary...
The way I've seen and read things, it's as if the bosses are the big monsters and we are their slaves or puppets. Keep in mind that they are not gods and they go to the toilet like everyone else... In Canada, if you do a professional job and act like a professional, they shall treat you like one.
