I need to send mail for Regional Sales Manager accepting his resignation.But need to mention serve notice period and clear all the payments dealed under him.

Dear member,
While submitting letter of resignation, the resigning employee is expected to mention clearly that his notice period is for ____ days and therefore, he will work till ____ (date).
Rather than reminding the clause about notice period in the appointment letter, if you take undertaking from the resigning employee then it will be in the fitness of the things. While accepting the letter of resignation, you could have been little cautious and told him to include his last working day. Therefore, even now also , you may return the resignation letter and tell him to bring clarity about the notice period.
