Candidates behaviour - assess if they are genuinely interested for the position offered

Hi Folks, Of late I have been finding it difficult to assess and analyse candidates, if they are genuinely interested for the position offered.
Can anyone guide me ways to asses the candidates .

You should be able to judge from body language & eye contact. But this required sustained body language interpretation and correction of inferences drawn. this will come with little efforts.
