I have been given offer letter by a company, but since I got good hike in my existing company, I am not willing to go in new company. So how to tell that company(new) that I am not joining your company?

If you have not accepted the offer then you can send a Thank You letter for giving you an opportunity to work with them, but due to unavoidable circumstances you could not join them, lastly sorry/regret for the inconvenience caused to them.

Decide first if you really want to rejoin & all your concerns with current company are killed (if salary was not only reason to leave the company)
if above answer is yes then response given by saji is appropriate.
if above answer is no then you can call new company & tell them truth the may match up with your new salary
after all choice is yours
