Dear,
The smoke detectors have a sensor which senses the smoke when it enters in smoke detector device then it transmits signal to fire alarm pannel and it alarms the siren. Same is with flame detectors.

Dear Purohit,
Very rightly said by KSS that smoke detector is having a sensor which has signal rays in it. These signal got disturb or got terminates when smoke enters in it.. But it is different for heat detector or flame detector..
These detector contains a small glass tube filled with a liquid (normally spacial wax), which has a limit of heat toleration capacity. As soon as temperature of wax increases & crosses that toleration level the tube bursts & alarm blows.. Same principle is being used in sprinklers too..

A smoke detector is a device that detects smoke, typically as an indicator of fire. Commercial, industrial, and mass residential devices issue a signal to a fire alarm system, while household detectors, known as smoke alarms, generally issue a local audible or visual alarm from the detector itself.

Smoke detectors are typically housed in a disk-shaped plastic enclosure about 150 millimetres (6 in) in diameter and 25 millimetres (1 in) thick, but the shape can vary by manufacturer or product line. Most smoke detectors work either by optical detection (photoelectric) or by physical process (ionization), while others use both detection methods to increase sensitivity to smoke. Sensitive alarms can be used to detect, and thus deter, smoking in areas where it is banned such as toilets and schools. Smoke detectors in large commercial, industrial, and residential buildings are usually powered by a central fire alarm system, which is powered by the building power with a battery backup. However, in many single family detached and smaller multiple family housings, a smoke alarm is often powered only by a single disposable battery.

Optical Detection is made by photodiode
A photodiode is a type of photodetector capable of converting light into either current or voltage, depending upon the mode of operation.[1] The common, traditional solar cell used to generate electric solar power is a large area photodiode.
Photodiodes are similar to regular semiconductor diodes except that they may be either exposed (to detect vacuum UV or X-rays) or packaged with a window or optical fiber connection to allow light to reach the sensitive part of the device. Many diodes designed for use specifically as a photodiode use a PIN junction rather than a p-n junction, to increase the speed of response. A photodiode is designed to operate in reverse bias.[2]
