In recruitment terms:
Lightning is when a vacancy is filled very quickly, without going through full procedures, without waiting for references, without verification of qualifications or experience. This happens usually when the candidate is known. Also, when a position needs to be filled very quickly following departure of an employee, usually at a mid to senior level. It is also known as Panic Recruitment and is always a little dangerous.
Bespoke is when the vacancy requirements are very specific and the candidate that is being sought must have very precise credentials. You could say a tailor made candidate for a tailor made position, an example would be in IT but specializing in say algorithms.
